Pasta aglio e olio

Simple, inexpensive, easy, and fast to make—what more can you ask for? This is a well-known pasta dish, and it’s so easy you can’t believe it. The secret is to use good-quality ingredients and lots and lots of salt. There are a few techniques to make this dish successful, but I will give you many tips and tricks to make this delicious dish in under 15 minutes.

Ingredients

1/2 lb of angel hair pasta

6 cloves of garlic, thinly sliced

1 tablespoon of extra virgin olive oil

1/4 cup of fine grated Parmesan cheese

Procedure

Fill a big pot with 4 quarts of water and 1.5 tablespoons of salt. Bring to a boil.

Meanwhile, heat a pan over low heat, add olive oil, and add thinly sliced garlic. Cook the garlic over low heat until fragrant and brown.

Simmer garlic in the oil.

When the water is boiled, add your pasta and cook it for 2 minutes less than the instructions on the package.

Once the pasta is done, add it directly to the pan.

Pasta is added to the pan.

Add cheese and some pasta water and continually stir to emulsify the sauce.

Remove from the heat and plate. Add extra cheese on top if you like.

NOTES:

When cooking the garlic in the oil, use super low heat, or the garlic will burn and taste bitter.

Add pasta water a bit until the sauce has the consistency you like.

I used Angle hair pasta here because it is quick to cook, but you can use any pasta you like.
