I love to go to Costco to get a pack of 12 croissants and eat them throughout the week. I believe that is the best choice for a breakfast sandwich with egg and bacon or sausage. But sometimes I want to change things up. So, I made these almond croissant. They are always a great treat at my house.
Ingredients
1 cup almond cream
6 large croissants (preferably day-old or stale)
1/4 cup (60 ml) simple syrup
1/4 cup (25 g) sliced almonds (for topping)
Instruction
Preheat oven to 350°F (175°C).
Line a baking sheet with parchment paper.
Slice croissants in half horizontally.
Place bottom halves, cut side up, on the prepared baking sheet.
Brush the cut sides of the bottom halves with simple syrup to keep them moist.
Spread a generous, even layer of almond cream on the cut sides of the bottom halves.
Place the top halves back on the almond cream-covered bottoms.
Brush the tops with simple syrup for a glossy finish.
Arrange the filled croissants on the baking sheet.
Bake for 15-20 minutes, until golden brown and the almond cream is lightly puffed.
Halfway through baking, sprinkle sliced almonds on top to toast for added crunch.
Let the croissants cool for a few minutes before serving, or enjoy warm.
